(Yes)vember Day 8: Rustic Crostini

This is a warm, delicious, nutritious meal idea that works well for breakfast, lunch or dinner. Rustic Crostini

(Serves 6)

6 large slices sourdough bread

3/4 pound thickly-sliced ham

6 eggs, poached

3 medium tomatoes, sliced

1/2 C. chopped mixed herbs (marjoram, thyme, basil, oregano, rosemary, sage)

butter

Directions:

Turn oven to 450 deg.

Butter each slice of bread, take 1/4 C. herbs and sprinkle on top (save the other 1/4 C. for later).

Put slices on baking sheet, bake until crust is crunchy (about 5).

Turn oven off.

Top each slice of bread with ham and tomato slices, return to oven for about 10 minutes, til toppings are warm.

Remove from oven, top each slice with a poached egg, sprinkle herbs on top.

And…serve with a smile :)
