(Yes)vember Day 1: Smothered Sweet Potatoes

Ingredients:
(serves 6)
6 large sweet potatoes
1 lb. bacon
1 onion
4 C. shredded low-fat cheddar cheese
Instructions:
Peel sweet potatoes and cut into 1/4 inch-thick medallions. Toss in olive oil and salt, bake at 400 degrees until soft when poked with a fork (about 30-35 min). Then turn off the oven.
While sweet potatoes are baking, slice onion. Cook the bacon, then crumble. Remove most of the bacon grease from the pan, then sauté the onion.
When sweet potatoes are cooked, place one layer of those medallions in a 9x13" pan. Sprinkle with 2 C. of shredded cheese. Layer remainder of sweet potatoes on the top, smother in 2 C. cheese, sautéed onions, and crumbled bacon. Place the pan in that oven of yours that's still a little warm. Leave it in for 10 minutes, until the cheese starts to melt.
(Hint: This dish looks especially beautiful if you serve it with a green vegetable on the side -- like broccoli, green beans, spinach or brussel sprouts.)
